Turkey Pot Pie

Ingredients
  

  • 1 cup Onion chopped
  • 1 cup Celery chopped
  • 1 cup Carrots chopped
  • 1/3 cup Butter melted
  • 1/2 cup Flour
  • 2 cups Chicken Broth
  • 1 cup Half-and-Half
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 4 cups Chicken cooked and diced or shredded
  • 1 cup Green Peas frozen
  • 1 10 inch Pie Shell unbaked
  • 1 10 inch Pie Shell unbaked

Instructions
 

  • Preheat oven to 400F degrees.
  • Sauté 1 cup Onion, 1 cup Celery, and 1 cup Carrots in 1/3 cup Butter for 10 minutes.
  • Add 1/2 cup Flour and cook one minute, stirring constantly.
  • Mix together 2 cups Chicken Broth and 1 cup Half-and-Half.
  • Gradually stir into vegetable mixture.
  • Cook over medium heat, stirring constantly until thick and bubbly.
  • Season with 1/2 teaspoon Salt and 1/4 teaspoon Pepper.
  • Add 4 cups Chicken and stir.
  • Add 1 cup Green Peas and stir.
  • Pour into unbaked 1 10 inch Pie Shell.
  • Cover with second 1 10 inch Pie Shell, seal edges, and prick top with fork.
  • Bake at 400F degrees for 30 to 40 minutes; until crust is golden brown.
