Turkey Pot Pie
Ingredients
- 1 cup Onion chopped
- 1 cup Celery chopped
- 1 cup Carrots chopped
- 1/3 cup Butter melted
- 1/2 cup Flour
- 2 cups Chicken Broth
- 1 cup Half-and-Half
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- 4 cups Chicken cooked and diced or shredded
- 1 cup Green Peas frozen
- 1 10 inch Pie Shell unbaked
- 1 10 inch Pie Shell unbaked
Instructions
- Preheat oven to 400F degrees.
- Sauté 1 cup Onion, 1 cup Celery, and 1 cup Carrots in 1/3 cup Butter for 10 minutes.
- Add 1/2 cup Flour and cook one minute, stirring constantly.
- Mix together 2 cups Chicken Broth and 1 cup Half-and-Half.
- Gradually stir into vegetable mixture.
- Cook over medium heat, stirring constantly until thick and bubbly.
- Season with 1/2 teaspoon Salt and 1/4 teaspoon Pepper.
- Add 4 cups Chicken and stir.
- Add 1 cup Green Peas and stir.
- Pour into unbaked 1 10 inch Pie Shell.
- Cover with second 1 10 inch Pie Shell, seal edges, and prick top with fork.
- Bake at 400F degrees for 30 to 40 minutes; until crust is golden brown.
