My own recipe.

Stuffin’ Muffins

Using Holiday Meal Leftovers. Can easily be scaled for more people.

Equipment

  • Muffin Tin – Standard 12 Muffin Pan
  • Cooking Spray

Ingredients
  

  • 1/2 cup Stuffing Best to use leftovers.
  • 2 Eggs
  • 1/2 cup Turkey Best to use leftovers. Cut into small bit size pieces.
  • 1/2 cup Turkey Gravy Best to use leftovers.
  • Cranberry for garnish

Instructions
 

  • Preheat oven to 350 (f) degrees.
  • Spray six muffin cups in the tray.
  • With 1/4 cup stuffing, line muffin tin cup on sides and bottom loosly. Leave center hollow. Repeat for remaining muffin tin cups.
    1/2 cup Stuffing
  • Crack one egg in each muffin cups.
    2 Eggs
  • Bake Stuffin' Muffins for 17 to 18 minutes. Until the edges of the yolk just start to set. Yolk will set more once you remove from oven.
  • While baking Stuffin' Muffins, reheat gravy and turkey.
  • Place two Stuffin' Muffins on a plate. Top with Turkey and then Gravy.
    1/2 cup Turkey, 1/2 cup Turkey Gravy
  • Garnish with cranberry.

  • Serve hot.

Notes

  • Great for morning after a Family Meal with turkey like Thanksgiving, Christmas, New Years, or Easter.
  • I always make a lot of extra stuffing for this meal.
