Rhubarb Upside Down Cake – Easy and Fast

Equipment

  • 1 9×13 inch Baking Pan
  • 1 Hand mixer

Ingredients
  

  • 1 box Yellow Cake mix
  • 1 cup Water
  • 1/3 cup Oil I use extra virgin olive oil
  • 3 Eggs
  • Cooking spray
  • 3 cups Rhubarb Cut into 1/4 inch cubes
  • 1 1/2 cups Granulated Sugar
  • 1 pint Heavy Whipping Cream
  • Whipped Cream for serving

Instructions
 

  • Preheat oven 350F degrees.
  • In large bowl, combine yellow cake mix, water, oil, and eggs.
    1 box Yellow Cake mix, 1 cup Water, 1/3 cup Oil, 3 Eggs
  • Blend with hand mixer for 1 to 2 minutes.
  • Spray 9×13 in pan with cooking spray.

  • Pour the cake mixture into a sprayed 9×13 pan.
  • Cover the cake mix with the cut Rhubarb. Cover just one layer deep.
    3 cups Rhubarb
  • Sprinkle sugar evenly over Rhubarb.
    1 1/2 cups Granulated Sugar
  • Pour Heavy Whipping Cream on the very top of everything!
    1 pint Heavy Whipping Cream
  • Bake it at 350 degrees for about 45 minutes or until you can poke a toothpick into the cake and it comes out dry!
  • Let cool for 5 minutes.
  • Serve with whipped cream.
