Bologna Burnt Ends

Ingredients
  

  • 3 pound Bologna Chubb (bologna roll)
  • 1 cup Your favorite BBQ sauce
  • 1/2 cup Your favorite BBQ rub
  • another 1/2 cup Your favorite BBQ sauce
  • 1/2 cup brown sugar
  • 1/2 can your favorite soda

Instructions
 

  • Preheat smoker to 250F degrees. Oven can be used, see notes below.
  • Remove casing from bologna and cut into one inch cubes.
    3 pound Bologna Chubb (bologna roll)
  • Add enough bbq sauce to lightly coat bologna.
    1 cup Your favorite BBQ sauce
  • Generously sprinkle with bbq rub and mix to coat. Add more or less to match your taste levels.
    1/2 cup Your favorite BBQ rub
  • Smoke for 2 hours or until a bark starts to form on bologna pieces.
  • Remove from smoker and add brown sugar and more bbq sauce. Carefully coat the bologna pieces.
    another 1/2 cup Your favorite BBQ sauce, 1/2 cup brown sugar
  • Pour soda in bottom of pan. Be careful not to wash off any coating. Drink the rest of the can.
    1/2 can your favorite soda
  • Place back on smoker at 250F degrees for an hour or until sauce is thick and tacky and the bark has reformed.
  • Best served at game time with toothpicks.

Notes

  • The long cook time allows for a flavorful bark to form.
  • An oven can be used is you d not have access to a smoker or its the middle of winter.
  • If you need need these in a quicker time frame, you can do the first smoke at 400F degrees for 30 minutes and the second smoke at 350F degrees for about 30 minutes.
