Rhubarb Upside Down Cake – Easy and Fast
Equipment
- 1 9×13 inch Baking Pan
- 1 Hand mixer
Ingredients
- 1 box Yellow Cake mix
- 1 cup Water
- 1/3 cup Oil I use extra virgin olive oil
- 3 Eggs
- Cooking spray
- 3 cups Rhubarb Cut into 1/4 inch cubes
- 1 1/2 cups Granulated Sugar
- 1 pint Heavy Whipping Cream
- Whipped Cream for serving
Instructions
- Preheat oven 350F degrees.
- In large bowl, combine yellow cake mix, water, oil, and eggs.1 box Yellow Cake mix, 1 cup Water, 1/3 cup Oil, 3 Eggs
- Blend with hand mixer for 1 to 2 minutes.
- Spray 9×13 in pan with cooking spray.Cooking spray
- Pour the cake mixture into a sprayed 9×13 pan.
- Cover the cake mix with the cut Rhubarb. Cover just one layer deep.3 cups Rhubarb
- Sprinkle sugar evenly over Rhubarb.1 1/2 cups Granulated Sugar
- Pour Heavy Whipping Cream on the very top of everything!1 pint Heavy Whipping Cream
- Bake it at 350 degrees for about 45 minutes or until you can poke a toothpick into the cake and it comes out dry!
- Let cool for 5 minutes.
- Serve with whipped cream.Whipped Cream
