Beefy Wild Rice Soup
Ingredients
- 1 pound ground beef
- 1/2 teaspoon Italian seasoning
- 8 cups water divided
- 2 large onions chopped
- 3 celery ribs chopped
- 2 cups carrots 1/2 inch slices
- 1 cup wild rice uncooked, long grain
- 4 beef bouillon cubes
- 1/2 teaspoon pepper
- 3 cans cream of mushroom soup, 10-3/4 ounces each condensed, undiluted
- 1 can mushroom 8 ounces stems and pieces, drained
Instructions
- In a Dutch oven, cook beef and Italian seasoning over medium heat until meat is no longer pink; drain.1 pound ground beef, 1/2 teaspoon Italian seasoning
- Add onions, celery, and carrots; cook until tender crisp,2 large onions, 3 celery ribs, 2 cups carrots
- Add 6 cups water, rice, bouillon cubes, and pepper; bring to a boil.8 cups water, 1 cup wild rice, 4 beef bouillon cubes, 1/2 teaspoon pepper
- Reduce heat; cover and simmer for 2 hours.
- Stir in the soup, mushrooms and remaining water.3 cans cream of mushroom soup,, 1 can mushroom
- Cover and simmer for 30 minutes.
