Beefy Wild Rice Soup

Ingredients
  

  • 1 pound ground beef
  • 1/2 teaspoon Italian seasoning
  • 8 cups water divided
  • 2 large onions chopped
  • 3 celery ribs chopped
  • 2 cups carrots 1/2 inch slices
  • 1 cup wild rice uncooked, long grain
  • 4 beef bouillon cubes
  • 1/2 teaspoon pepper
  • 3 cans cream of mushroom soup, 10-3/4 ounces each condensed, undiluted
  • 1 can mushroom 8 ounces stems and pieces, drained

Instructions
 

  • In a Dutch oven, cook beef and Italian seasoning over medium heat until meat is no longer pink; drain.

  • Add onions, celery, and carrots; cook until tender crisp,
    2 large onions, 3 celery ribs, 2 cups carrots
  • Add 6 cups water, rice, bouillon cubes, and pepper; bring to a boil.
    8 cups water, 1 cup wild rice, 4 beef bouillon cubes, 1/2 teaspoon pepper
  • Reduce heat; cover and simmer for 2 hours.
  • Stir in the soup, mushrooms and remaining water.
    3 cans cream of mushroom soup,, 1 can mushroom
  • Cover and simmer for 30 minutes.
