Cowboy Baked Beans from my Mommy
My mom got this from a craft fair many years ago. I originally
called for lima beans. Not a fan of lima beans. So I made some
changes.
Equipment
- 1 Crock pot
Ingredients
- 1/2 pound Ground Beef – sometimes over a pound – I like it meatier
- 1/2 pound Bacon – sometimes use over a pound and someteimes ends and pieces
- 1 chopped Onion – I use about 1/2 cup coarsely chopped
- small Garlic – about a glove
- 1 cup Ketchup
- 1 teaspoon Salt
- 3/4 cup packed Brown Sugar
- 1 teaspoon Dried Mustard optional – I do not use
- 2 teaspoons Vinegar
- 1/2 cup White Sugar
- 1 can 28 ounces Bush’s Baked Beans
- 1 can 16 ounces Bush’s Great Northern Beans
- 1 can 16 ounces Bush’s Light Red Kidney Beans – drained
Instructions
- Fry bacon till almost done – about 15 minutes.
- Add ground beef and garlic, and fry until beef is browned.
- Add onion and and cook until tender.
- Add ketchup, salt, brown sugar, dry mustard (optional), vinegar, and sugar and mix well.
- Add beans. Mixing carefully not to crush beans.
- Simmer for an hour.
- Can be made a day ahead. Tastes better the longer it sits.
- Can be made in a crock pot.
