Chicken al a King
Equipment
- Double boiler
Ingredients
- 6 tablespoons Butter
- 1/2 cup Flour
- 1/2 teaspoon Salt
- 3 cups Liquid Use peas juice from can first. Add milk to reach amount. For the milk, the higher the fat content, the better. Whole > 2% > 1% > Skim.
- 1 can Mushrooms 8 oz – optional – drained
- 1 can Peas 15 ox – seperate liquid from peas.
- 3 cups Chicken – Cooked
- 8 slices bread
- butter for toast
Instructions
- Melt butter in top of double boiler, either over water in microwave. Remove from heat.6 tablespoons Butter
- Whisk in flour and salt until smooth.1/2 cup Flour, 1/2 teaspoon Salt
- Whisk in liquid. Start by adding 2 tablespons. Whisk until smooth. Add 2 more tablesppons. Whisk until smooth. Add 1/4 cup more and whisk until smooth. Add another 1/4 cup more and whisk until smooth. Add remiaing and whisk until smooth.3 cups Liquid
- Return to heat on double boiler.
- Set heat to light simmer.
- Whisk frequently until thick. This will take 20 to 30 minutes.
- Once cream sauce is thick, stir in chicken and mushrooms.1 can Mushrooms, 3 cups Chicken – Cooked
- Heat until chicken is warmed.
- Carefully stir in peas.1 can Peas
- Toast bread.8 slices bread
- Serve Chicken al a King over buttered toast.
Notes
- Any type pf poultry can be used – chicken, turkey, goose, duck,
- Goes greeat with leftover Turkey from your holiday meal.
- Use your favorite bread.
